I’m so glad I noticed the aging mango on the counter this morning. It’s what totally inspired this dish. I was hungry and I thought it would be fun to build a meal around the mango.

Simple Salmon Salad

I made this simple salad on a whim today. Gina totally inspired me with her Shrimp Salad on Cucumber Slices. As soon as I saw it I knew I wanted to make something to serve on cucumber slices. It’s a GENIUS idea!
So that’s what I did today with a single serve salmon pack. I received a bunch of seafood products in a price pack I won at the Perinatal Nutrition Working Group’s booth at BlogHer. Sweet Sausage and Vegetables over Bulgur

WOW I can’t believe I received no complaints about dinner tonight. Not a single one! And we even ate bulgur and green beans. ;) Two ingredients that get mixed reactions in my household.
I made something similar to my quick Sausage and Pepper idea but used bulgur instead of pasta and added green beans to the sauce simply because I had them. Banana Berry Smoothie

This is my new favorite smoothie, especially after a run. It’s quick, tasty and super nutritious! According to NutrtionData.com it’s full of Fiber, Vitamin D, Calcium, Vitamin C, Vitamin E and Protein. Not a bad way to start your day or replenish after a fabulous workout!
Oh! and the little guy loves the stuff! :)

Idea: Parmesan Dusted Chicken Fingers with Whole Wheat Pasta and Sun-Dried Tomato Sauce

This idea just popped into my head when I started thinking about what to make for dinner. I gotta be honest, I haven’t gone grocery shopping since coming home from the beach. I just haven’t been in the mood and I decided to use what I had on hand until my trip to the CSA farm this Friday. I can’t wait to see what goodies got harvested this week!

Cheesesteak Wraps

I’m so glad I had leftovers!! I used the London Broil from yesterday, a green bell pepper and some onion to make the most delicious wrap!
It worked out great as I had friend over for lunch today. The 6oz was perfect to make two loaded cheesesteaks. I decided to use a wrap to make it fun, light and full of fiber. Plus, I really didn’t have any other options. ;)

Dry Rubbed Pan-Fried London Broil

There are a few meals that I forget about which make wonderfully easy, delicious family pleasing dinners. London Broil is one of them.
London Broil is actually not a cut of meat although I always see packages of beef listed as such. I believe it’s a cooking process. Generally I buy choice cuts that are labeled "London Broil" which are about 1 inch thick and a pound. It’s more then enough for us and allows me to cook dinner up quickly having just enough leftovers to make a cheese steak or two the next day. Whole Wheat Blueberry Pancake Waffles

What’s a pancake waffle you ask? Well it’s my answer to not really knowing the difference between waffle and pancakes. I *THINK* waffles generally contain a bit more fat and sugar to crisp up more but I’m not sure. Normally I just use pancake batter in the waffle iron leaving them in long enough to crisp up and I’ve never had a problem. Then again I’m not known to follow any traditional rules when cooking. I have 2 sons, one in preschool and one will be next September. I have to pack them snacks for school and I really don’t want to keep relying on processed snack food for them. What kind of snacks do you give your little boy so he can avoid the processed food trap? Do you have some healthy kid-friendly snack ideas? Fruit just goes so far with my kids!

Sorry for my absence. I was living it up in NYC at BlogHer! Of course what does the husband want to have for dinner my first day back? Pizza. ugh.
My solution… Order a small to minimize leftovers and make a simple salad on the side. Genius right?!? Sorry.. patting myself on the back for this one. Pizza is by far me weakness. Quick Scallops with Rice & Sugar Snap Peas

I came home from work with a mission to cook a healthy meal with the little guy. I had defrosted scallops, some minute rice, and fresh sugar snap peas. Quick Curried Chicken Salad with Peas

I have confessed my dislike of mayo many times. Most recently on my Garden Tuna Salad with Feta idea. Unfortunately this dislike of one particular condiment has kept me from enjoying some pretty tasty traditional sandwich salads like tuna and chicken.
Honesty, I never understood peoples fascinations with these deli favorites. What the big deal anyway?
